About the Wine

Sapere is a rare traditional grape variety of Imereti, known for its deep color, fresh acidity and distinctive character. This Sapere wine is naturally made in qvevri, allowing the grape to express its character while reflecting the traditions of Georgian winemaking.

Tasting Notes

Aromas of ripe berries, black cherry and dark fruit, with subtle herbal notes. On the palate, Sapere shows vibrant acidity, gentle tannins and a long, dry finish.

Winemaking

The grapes are hand-harvested in Imereti and fermented with native yeasts in traditional qvevri. The wine remains in contact with the grape skins for one month and is produced without filtration or with minimal intervention.

The 2022 Harvest

The 2022 Sapere reflects the character of Imereti and the traditional qvevri method. The wine spent one month in contact with the grape skins, developing its deep color, structure and depth while retaining the fresh acidity of the variety. It is an unfiltered wine made with minimal intervention.

Food Pairing

This wine pairs beautifully with traditional Georgian cuisine, fresh salads, grilled vegetables, fish, poultry and lightly spiced dishes.
