At Nikoladze Winery, we make our wines using the traditional Georgian qvevri method. These large, egg-shaped clay vessels are buried in the earth, where wine can ferment and mature naturally.
Grapes are harvested by hand and, depending on the wine, fermented with their skins, seeds and stems. We allow the wine time to develop in qvevri, with minimal intervention, preserving the character of the grapes and the place where they are grown.
For us, qvevri winemaking is more than an ancient technique. It is a living part of our family heritage, passed from one generation to the next.
